Visible light spectrum and temperature profile of fresh coconut water stored for two weeks. Duplicates of 10 mL of fresh coconut water were incubated at 35°C with an increase in temperature by 10°C every 10 minutes. At the end of each incubation period, absorbances were measured at wavelengths intervals of 20 nm starting from 280 nm to 540 nm, (A). presents the visible light spectrum at each incubation temperature. (B). presents the regression of the absorbance at the wavelength of maximum absorbance (λmax, 385 nm) and temperature as well as that between the absorbance at 540 nm and temperature.
